i reallllly need…

it to stop raining.


but with rain in the forecast every day this next week….it’s not looking good.

on a happier note…here’s an excellent recipe that my mom and i adapted from the Biggest Loser’s recipes. first we halved it (so, if you want to make more double everything) because it made a ridiculous amount in the original. second, we used yellow mustard instead of mustard powder, mainly because we didn’t have any mustard powder and never use it (it would be silly to spend $3.00 on a a powder like that, that would go bad before we used it again.). All that to say, the original recipe calls for 1 tsp mustard powder, we used 2 tbsp yellow mustard and i promise you it was the best thing we could’ve done. the flavor was incredible.

Doc’s Chili

what you’ll need:

2 tbsp. olive oil

1 1/2  cups onion, chopped

1 pound ground turkey (we love the Jennie-O, it taste the best to us)

1 can fire-roasted tomatoes, (14.5 oz)

1 can low-sodium black beans, (15 oz)

1 can low-sodium pinto beans, (16 oz)

1 cup chicken broth

1 tbsp minced garlic

1 1/2 tbsp chili powder

1 tsp ground cumin

2 tbsp yellow mustard

what you’ll do:

coat a large saucepan or dutch oven with olive oil. add the onions and cook over medium-high heat until they’re soft and just starting to brown. add the ground turkey and cook over medium-high heat, breaking up the meat with a spoon, for about 6 minutes, or until no longer pink. add the tomatoes, pinto and black beans, broth, garlic, chili powder, cumin, and yellow mustard. bring to a boil over high heat, then reduce the heat to low. cover and simmer for 20 minutes.

then…eat.it.up. i wanted to lick my bowl it was so good.

the best part about this chili:::::: for 1 cup (which is a serving) it’s only 150 calories. that means for two cups, and believe me you’ll be full, it’s only 300 calories. it doesn’t get much better than that.
