so, i know, i lack another picture…but let me explain, i started making this salad with the intentions of documenting it so that i could share it…BUT as i was cutting and scooping the 8 avocados out in my calm and organized kitchen, my grandmother walked in with her 5 dishes and chaos erupted. there were dishes everywhere, i suddenly had no space, drawers were hitting me and it was very surreal. ok, so maybe im being a little overdramatic; but my grandmother did walk in with 5 dishes and i was overwhelmed by it all and completely forgot to take a picture…maybe it was the fact that she brought my favorite coconut cake, ever, or even better, homemade lemon curd. i know, i know, be jealous. so i did make the salad and it was more than fantastic. it’s similar to guacamole, but not spicy. it’s fresh. it’s simple. it’s ridiculously easy. and i’m proud to say this one is an nicoley original.
what you’ll need::
8 avocados, sliced into 1/2″ chunks (not mashed, that’s just wrong)
1/4 cup red onion, finely chopped
2 tbsp green onion, chopped
2 tbsp cilantro
1/4 cup fresh lime juice (i had good limes, it took 1 1/2 limes)
8 slices of center-cut bacon, crumbled
what you’ll do::
Cut the avocados in half, removing the pit, and make criss-cross cuts in the avocado halves (making sure not to cut throught the skin) and scooping it out into a medium sized bowl. Add the lime juice and gently fold the avocados making sure the lime juice is equally distributed. Then fold in the chopped red and green onion, as well as the cilantro. Add the bacon right before serving.
See? i told you it was easy….i think next time i make it i’ll add some grilled corn for another cruchy texture.
This is good by itself. eaten in big spoonfuls. :) but it would also be good…

2. a good dip
3. with quesadillas
